Belgian Waffles

Last week I purchased a waffle maker so of course I had to debut it with a new recipe. Due to their slightly caramelized taste, brought by the pearl sugar, belgian waffles are my favorite.

My version of the belgian waffle has the advantage of not using yeast, which means the dough does not need to rest before being cooked. You just need to mix all the ingredients together, in the stand mixer or by hand, and put it in your waffle maker.

Belgian waffles go great with all kinds of toppings, such as:

  • strawberries and whipped cream
  • melted dark chocolate
  • honey and walnuts
  • vanilla ice cream and caramel
  • … and many others!

I recommend you try them all to find your favorites. And here’s to the many waffles to come!

Ingredients

  • 450 g all-purpose flour
  • 3 tsp baking powder
  • 60 g brown sugar
  • 2 eggs
  • 200 ml milk
  • 1 tsp vanilla essence
  • 250 g unsalted butter (softened)
  • 140 g pearl sugar

Instructions

  • In a bowl, mix the flour, baking powder and sugar.
  • In a separate bowl, mix the eggs with the milk and vanilla.
  • Beat the egg mixture with the hook attachment of your mixer, slowly adding in the dry ingredients and the softened butter. Alternatively, you can knead the dough by hand, until it is smooth.
  • Lastly, add the pearl sugar and incorporate it in the dough.
  • Cook spoonfuls of the waffle dough in your waffle maker, previously greased and warmed up. They will be ready when the sugar caramelizes and they are nice golden color.
