The Ultimate Chocolate Pie

Another recipe for all the chocoholics! This chocolate pie is simply irresistible.

The inspiration was the recipe of the “Mississipi Mud Pie”, which comes from the United States. Its name is due to how its chocolate layers resemble the layers of the ground. Despite its peculiar name, it is a pie rich in contrasting flavors and textures, a true feast for the senses.

Oat cookies, followed by a fudgy brownie, silky chocolate cream, and soft whipped cream. Are you conviced yet? Then make sure to try this pie, which is definitely “the” chocolate pie.

Ingredients
  

Cookie Layer

  • 300 g oat cookies
  • 80 g unsalted butter (melted)

Brownie Layer

  • 180 g chocolate (50 to 60% cocoa)
  • 120 g unsalted butter
  • 80 g brown sugar
  • 70 g white sugar
  • 3 eggs
  • 1 tsp vanilla essence
  • 3 tbsp cocoa powder
  • 3 tbsp all-purpose flour

Chocolate Cream Layer

  • 100 g milk chocolate
  • 2 tbsp unsalted butter (softened)
  • 500 ml milk
  • 4 egg yolks
  • 80 g white sugar
  • 4 tbsp cocoa powder
  • 3 tbsp cornstarch

Whipped Cream Layer

  • 400 ml heavy cream
  • 2 tbsp white sugar
  • cocoa powder

Instructions
 

Cookie Layer

  • Preheat the oven to 160 º C.
  • Place the cookies in a food processor and grind them to a powder.
  • In a bowl, mix the cookies with the melted butter. The result should resemble wet sand in texture.
  • Distribute the cookie mixture in a pie frame of about 24 cm in diameter. Mold the base and sides of the pie with the back of a tablespoon.
  • Bake for about 10 minutes. Remove from the oven and set aside to cool down.

Brownie Layer

  • Set the oven's temperature to 180 º C.
  • In the microwave or over a water bath, melt the chocolate and butter.
  • Transfer the mixture to a big bowl. Add the sugars, cocoa powder and vanilla, mixing with a whisk.
  • Add the eggs one at a time. Whisk again.
  • Finally, sift the flour and the gently fold it into the mixture with a spatula.

Chocolate Cream Layer

  • Coarsely chop the chocolate and place it in a big bowl with the softened butter. Set aside.
  • In a pan, mix the remaining ingredients.
  • Bring this liquid over medium heat, continuing to stir with a whisk until it thickens.
  • Remove from the heat and pass this mixture through a sieve, pouring it on top of the chocolate and butter. Let it sit for a couple minutes-
  • With a spatula, fold the cream into the melting chocolate and butter, making sure you have smooth and silky mixture.
  • After letting it cool down slightly, spread the chocolate cream on top of the brownie layer, ensuring it is evenly spread. Place in the fridge for about 2 hours.

Whipped Cream Layer

  • In the mixer, beat the heavy cream to stiff peaks, slowly adding in the sugar.
  • Spread the whipped cream on top of the chocolate cream layer. Decorate with cocoa powder to your liking.

Notes

I recommend you remove the pie from the fridge about 30 minutes before tasting for the ideal flavor and texture.
To remove the pie from the pie frame, it is best to grease it with butter and line it with parchment paper. Once the cookie crust has been in the fridge for a few hours, it will be hard enough that the pie can be removed and moved to a serving plate.
