Black Forest Brownie

No Christmas is complete without a generous serving of chocolate. Two of my favorite picks are brownies, creamy and intense, and black forest cake, with its unique cherry liquor flavoring.

And if we can have them together, why choose? This black forest brownie is the answer – a dark chocolate and cherry liquor brownie base topped with whipped cream and cherries. A very “adult” treat, worth sharing with the family this season.

I must warn you that the dark chocolate taste is quite strong, even slightly bitter. For those who prefer the sweeter side, I would advise you to use a lower cocoa percentage chocolate!

Ingredients
  

Dark Chocolate Brownie

  • 250 g dark chocolate (70% cocoa)
  • 120 g unsalted butter
  • 90 g brown sugar
  • 90 g white sugar
  • 4 eggs
  • 3 tbsp cherry liquor
  • 4 tbsp all-purpose flour
  • 2 tbsp cocoa powder
  • 2 tsp baking powder

Whipped Cream Topping

  • 300 ml heavy cream
  • 3 tbsp white sugar
  • 1 tbsp cherry liquor
  • 150 g cherries in syrup
  • chocolate shavings

Instructions
 

Dark Chocolate Brownie

  • Pre-heat the oven to 180 º C.
  • Melt the chocolate and butter in a double boiler.
  • Transfer the mixture to a bowl and mix with the hand whisker to cool it down a little.
  • Add the sugars and beat for a few minutes.
  • One by one, add the eggs, continuing to stir. Next pour in the cherry liquor and stir again.
  • Finally, sift in the flour, cocoa, and baking powder, folding them in with a spatula.
  • Place the mixture in a square cake pan or tray (23×23 cm), previously greased and lined with baking paper. Bake for about 20 minutes, or until a skewer inserted in the borders of the brownie comes out dry, but still slightly wet in the center.

Whipped Cream Topping

  • In the mixer, beat the whipped cream until stiff peaks, slowly adding the sugar and liquor.
  • Using a pastry bag, decorate the brownie with whipped cream. Top it with cherries and chocolate shavings.

Notes

The baking time can be adjusted depending on how creamy you like how your brownie to be. I recommend that you keep the brownie in the fridge to conserve the taste and texture.
