Christmas Cookies

We have less than a month until Christmas! Those who know me know how much I love the festive season – the decorations, the Christmas spirit, and, most importantly, the sweets (of course).

To start the Xmas sharing, I chose a comfort recipe. These spiced cookies are perfect to enjoy all tucked in, with tea or hot chocolate, in the comfort of your home.

The cookies are crispy on the edges and softer in the center, and the spices give them the most pleasant flavor. They spread an irresistible scent around the house when they leave the oven.

Obviously, one of the advantages of baking cookies is how quickly they can be prepared. And this recipe also makes a big amount of them, to ensure you always have something sweet at home. The icing is optional, but decorating them to your liking can be quite fun. It may even make for a fun activity to do as a family.

Cinnamon and Gingerbread Cookies

Ingredients
  

For the cookies:

  • 180 g unsalted butter (at room temperature)
  • 120 g dark brown sugar
  • 2 eggs (L)
  • 60 g honey
  • 320 g all-purpose flour
  • 1 tsp ground ginger
  • 1/2 tsp ground nutmeg
  • 1 tsp cinnamon powder
  • pinch of salt

For the icing:

  • 1 egg white (L)
  • 1 tsp lemon juice
  • 300 g powdered sugar

Instructions
 

For the cookies:

  • In a bowl mix flour, salt and spices. Set aside.
  • Beat the butter with sugar until it becomes a paler color.
  • Add the eggs and honey. Continue mixing.
  • Lower the speed setting on the mixer. Slowly incorporate the dry ingredients.
  • Make a ball of cookie dough. Cover with cling wrap and refrigerate for about an hour.
  • Remove from the fridge and shape your cookies to your liking.
  • Distribute across two trays, previously greased and lined with baking paper. Refrigerate for another 10 minutes.
  • Bake for about 10 to 15 minutes, until they are nice golden color. Let the cookies cool down completely.

For the icing:

  • Mix the egg white with the lemon juice.
  • Gradually add in the powdered sugar until you have the desired consistency to decorate the cookies.
  • Decorate the cookies to your liking using a pastry bag.
